Preheat your oven to 375°F (190°C). Spread the pita squares on a baking sheet. Drizzle with a little olive oil and toss to coat. Bake for 5-7 minutes until golden and crispy. Let cool.
In a large salad bowl, combine the tomatoes, cucumber, bell pepper, radishes, red onion, mint, and parsley.
In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and black pepper until well combined.
Pour the dressing over the salad and toss gently to combine. Just before serving, add the crispy pita croutons and give the salad one last toss.
