Salad

  • 2 large tomatoes, diced
  • 1 large cucumber, diced
  • 1 red bell pepper, diced
  • 5 radishes, thinly sliced
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/4 cup fresh parsley, roughly chopped
  • 2 pieces of pita bread, cut into 1-inch squares

Dressing

  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp sumac
  • 1/2 tsp salt
  • 1/4 tsp black pepper

    Prepare the Pita Croutons

    Preheat your oven to 375°F (190°C). Spread the pita squares on a baking sheet. Drizzle with a little olive oil and toss to coat. Bake for 5-7 minutes until golden and crispy. Let cool.

    Mix the Salad

    In a large salad bowl, combine the tomatoes, cucumber, bell pepper, radishes, red onion, mint, and parsley.

    Make the Dressing

    In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and black pepper until well combined.

    Assemble the Salad

    Pour the dressing over the salad and toss gently to combine. Just before serving, add the crispy pita croutons and give the salad one last toss.

Origin story

Fattoush is a traditional Lebanese salad that makes the most of simple ingredients, often served as part of a mezze. The addition of sumac, a tangy spice made from dried berries, gives it a signature tart flavor that perfectly complements the fresh vegetables.
