Ingredients

Mashed Potatoes

  • 2 pounds russet potatoes, peeled and cut into 1-inch pieces
  • 4 cloves garlic, peeled
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley, for garnish

Method

  1. 1

    Boil the Potatoes

Place the potatoes and garlic cloves in a large pot and cover with cold water by about an inch. Add a pinch of salt. Bring to a boil over high heat, then reduce heat to medium and simmer for 15-20 minutes, or until the potatoes are very tender.

  2. 2

    Drain and Mash

Drain the potatoes and garlic well, then return them to the pot. Add the butter and mash using a potato masher or fork until mostly smooth.

  3. 3

    Mix in Parmesan and Cream

Stir in the Parmesan cheese and heavy cream, mixing until the potatoes are creamy and the ingredients are fully integrated. Season with salt and black pepper to taste.

  4. 4

    Garnish and Serve

Transfer the mashed potatoes to a serving bowl, garnish with chopped parsley, and serve hot alongside your classic meatloaf.
