In a small bowl, whisk together soy sauce, mirin, sake, sugar, grated ginger, and minced garlic until sugar is dissolved.
Heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces and cook for 5 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
In the same skillet, pour in the teriyaki sauce and bring to a simmer. Return chicken pieces to the skillet and cook, turning occasionally, until sauce is thickened and coats the chicken, about 3-4 minutes.
Sprinkle chicken with sesame seeds and chopped green onions. Serve hot over steamed rice.
