In a small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of honey, 1 teaspoon of grated ginger, and 1 minced garlic clove until combined.
Heat 1 tablespoon of olive oil and 1 teaspoon of sesame oil in a large non-stick skillet over medium-high heat. Place the salmon fillets skin-side down in the skillet and cook for about 4-5 minutes. Flip the fillets, then pour the soy-ginger glaze over them. Continue cooking for an additional 4-5 minutes, or until the salmon is cooked through and the glaze has slightly thickened.
Sprinkle the cooked salmon with sesame seeds and sliced green onions. Transfer to a serving plate.
In the same skillet, add another teaspoon of sesame oil over medium heat. Add minced garlic and stir for 30 seconds. Toss in the spinach and cook, stirring constantly, until wilted, about 2-3 minutes. Stir in 1 tablespoon of soy sauce and 1 tablespoon of sesame seeds.
Plate the salmon alongside the sesame spinach and serve immediately, drizzling any remaining glaze from the pan over the salmon.
