  • 4 boneless, skinless chicken breasts
  • 1 lemon, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 cups broccoli florets
  • 3 tbsp olive oil
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • Salt and pepper to taste

    Preheat your oven to 400°F (200°C). In a large baking sheet, arrange the chicken breasts in the center.

    Drizzle 2 tablespoons of olive oil over the chicken. Sprinkle with oregano, thyme, salt, and pepper. Arrange the lemon slices, bell peppers, onion slices, and broccoli around the chicken.

    Drizzle the remaining olive oil over the vegetables. Roast in the oven for 30 minutes or until the chicken is cooked through and the vegetables are tender. The chicken should reach an internal temperature of 165°F (75°C).

    Remove from the oven and let rest for 5 minutes. Serve the chicken with the roasted vegetables, garnished with extra lemon slices if desired.
