For the Chicken and Potatoes
Preheat your oven to 400°F (200°C). In a small bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
Heat a large oven-proof skillet over medium-high heat. Add a tablespoon of the prepared lemon-garlic mixture to the pan. Sear the chicken breasts for 2-3 minutes on each side until golden brown. Remove from heat.
Scatter the halved potatoes around the chicken in the skillet. Drizzle the remaining lemon-garlic mixture over everything. Toss the potatoes to ensure they are well-coated. Transfer the skillet to the preheated oven.
Roast for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the potatoes are tender. Stir the potatoes halfway through cooking.
Remove the skillet from the oven. Let the chicken rest for a few minutes before slicing. Garnish with chopped fresh parsley before serving.
