Salmon

  • 2 salmon fillets (about 6 oz each)
  • Salt and white pepper to taste

Miso glaze

  • 2 tbsp white miso paste
  • 1 tbsp mirin
  • 1 tbsp sake (or dry sherry)
  • 1 tsp sesame oil
  • 1 tsp honey

To serve

  • Steamed rice
  • 2 scallions, thinly sliced
  • 1 tsp toasted sesame seeds

    Make the glaze

    Whisk together the miso, mirin, sake, sesame oil, and honey in a small bowl until smooth.

    Prep the salmon

    Pat the salmon dry with paper towels. Season lightly with salt and white pepper. Place skin-side down on a foil-lined baking sheet.

    Glaze and broil

    Spread a generous layer of glaze over the top of each fillet. Broil on the top rack for 10 to 12 minutes until caramelized at the edges.

    Rest and serve

    Let the salmon rest for 2 minutes before serving over steamed rice. Scatter sliced scallions and sesame seeds over the top.
