Chicken and Vegetables
In a small bowl, whisk together the gluten-free soy sauce, honey, mirin, sesame oil, cornstarch, and water until smooth. Set aside.
In a large skillet over medium-high heat, heat the vegetable oil. Add the chicken thighs and cook for 4-5 minutes on each side until browned and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the red bell pepper, snap peas, broccoli, garlic, and ginger. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
Return the chicken to the skillet. Pour the teriyaki sauce over the chicken and vegetables. Cook for 2-3 minutes, stirring occasionally, until the sauce thickens and coats the chicken and vegetables. Garnish with sliced green onions and sesame seeds before serving.
