Season the chicken breasts with salt and pepper on both sides.
In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until they're golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the capers and lemon juice. If using lemon zest, add it here as well. Stir to combine and let the sauce simmer for a minute to meld the flavors.
Return the chicken to the skillet, spooning the sauce over it to coat. Let it cook together for another minute to warm through.
