Ingredients

Chicken Paprikash

  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 2 lbs bone-in chicken thighs
  • 3 tbsp Hungarian sweet paprika
  • 1 tbsp flour
  • 1 cup chicken broth
  • 1 cup sour cream
  • Salt and pepper to taste
  • Chopped parsley for garnish

Buttery Spaetzle

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 cup milk
  • 1 tsp salt
  • 2 tbsp unsalted butter

Method

  1. 1

    Prepare the Chicken Paprikash

In a large pot, heat the vegetable oil over medium heat. Add the onions and sauté until they are softened and golden, about 5 minutes. Add the chicken thighs and brown on all sides, around 6-8 minutes. Sprinkle in the paprika and flour, stirring to coat the chicken. Slowly add the chicken broth, stirring constantly, until the sauce is thickened. Cover and simmer on low heat for 30-35 minutes, or until the chicken is cooked through. Stir in the sour cream and season with salt and pepper to taste.

  2. 2

    Make the Spaetzle

In a mixing bowl, combine flour, eggs, milk, and salt, stirring until smooth. Bring a large pot of salted water to a gentle boil. Using a spaetzle maker or a colander with large holes, press the dough through to create small dumplings directly into the boiling water. Cook for 2-3 minutes or until they float. Remove with a slotted spoon and toss them with butter in a warm skillet until lightly golden.

  3. 3

    Serve

Place the warm spaetzle on a serving plate, pour the chicken paprikash over them, and garnish with chopped parsley. Serve immediately, allowing everyone to enjoy this comforting meal.
