Chicken and Teriyaki Sauce
Rice and Broccoli
In a small bowl, whisk together soy sauce, mirin, brown sugar, rice vinegar, garlic, and ginger. Set aside.
Heat vegetable oil in a large skillet over medium-high heat. Add chicken thighs and cook for 5-6 minutes each side, or until golden brown and cooked through. Remove chicken from skillet and set aside.
In the same skillet, add the prepared sauce. Bring to a simmer, then reduce heat. Mix cornstarch with water to create a slurry and add to the sauce, stirring until thickened, about 2 minutes.
Return cooked chicken to the skillet, tossing to coat the pieces evenly with the thickened sauce. Let it simmer for an additional 2 minutes.
Rinse jasmine rice under cold water until water runs clear. In a medium saucepan, combine rice and water. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 10 minutes.
While the rice is cooking, steam broccoli in a steamer basket over boiling water for 4-5 minutes, or until tender-crisp. Season with salt to taste.
Serve the teriyaki chicken over a bed of jasmine rice with a side of steamed broccoli. Sprinkle with sesame seeds if desired.
