Add the chilled, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, blend until the mixture resembles coarse crumbs. Work quickly to avoid warming the butter.
In a separate bowl, whisk together the cream, honey, and egg until smooth. Gradually add this mixture to the dry ingredients, stirring gently until the dough just comes together. Avoid overmixing to ensure tender scones.
Turn the dough out onto a lightly floured surface. Pat it into a circle about 1 inch thick. Cut into 8 wedges using a sharp knife. Transfer wedges to a baking sheet lined with parchment paper.
Preheat your oven to 400°F (200°C). In a small bowl, mix the remaining cream with honey. Brush this over the top of each scone. Bake in the preheated oven for 15 minutes or until the tops are golden brown. Allow to cool slightly on a wire rack.
