In a bowl, combine hoisin sauce, soy sauce, honey, five-spice powder, rice vinegar, garlic, and ginger. Marinate pork in the mixture for at least 15 minutes. Preheat oven to 200°C (400°F). Place marinated pork on a baking tray and roast for 30-35 minutes, turning once, until caramelized and tender.
Heat olive oil in a skillet over medium heat. Sprinkle pineapple rings with brown sugar and cook in the skillet for 3-4 minutes on each side, or until golden brown and caramelized.
In a small bowl, whisk together mayonnaise, Sriracha sauce, and lime juice until smooth. Adjust Sriracha to taste for desired heat level.
Warm tortillas in a dry skillet or microwave. Layer each tortilla with slices of Char Siu pork, a ring of caramelized pineapple, a drizzle of Sriracha creme, a sprinkle of cilantro, and a few rings of red onion. Serve immediately.
