In a large skillet, melt 1 tablespoon of butter over medium heat. Add the sliced onions and mushrooms. Cook until softened and lightly browned, about 5-7 minutes. Remove from the skillet and set aside.
In the same skillet, add another tablespoon of butter. Increase the heat to medium-high. Add the thinly sliced beef and cook until browned on all sides, about 3-4 minutes. Don’t overcrowd the pan; you may need to do this in batches.
Sprinkle the flour over the beef and stir to combine. Cook for 1 minute. Gradually add the beef broth, stirring constantly to avoid lumps. Bring to a simmer and let it thicken for about 5 minutes.
Lower the heat and stir in the sour cream. Mix well until smooth and heated through. Return the mushrooms and onions to the skillet. Stir to combine and heat everything together. Season with salt and pepper to taste.
Serve over cooked egg noodles or rice.
