  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp ground cinnamon
  • 1/2 tsp cayenne pepper
  • 1 1/2 lbs butternut squash, peeled and cut into 1-inch cubes
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups vegetable broth
  • Salt and pepper to taste

Finishing Touches

  • 1/4 cup golden raisins
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup slivered almonds, toasted
  • Cooked couscous or quinoa, for serving

    In a large, heavy-bottomed pot, heat the olive oil over medium heat. Add the chopped onion, cooking until soft and translucent, about 5 minutes. Stir in the garlic, cumin, coriander, cinnamon, and cayenne, cooking for an additional 2 minutes until fragrant.
