Olive Tapenade
Preheat your oven to 400°F (200°C). Slice the top off each garlic head to expose the cloves, drizzle with 1 tbsp olive oil, wrap in foil, and roast for 30 minutes until soft and caramelized.
Once garlic is cool enough to handle, squeeze the roasted cloves out into a food processor. Add chickpeas, tahini, lemon juice, cumin, and salt. Blend until smooth, adding warm water gradually until desired consistency is reached.
In a small food processor, combine Kalamata olives, capers, garlic, parsley, olive oil, and lemon juice. Pulse until mixed but still slightly chunky.
Spread the hummus in a serving dish, create a small well in the center and spoon the olive tapenade over it. Drizzle with extra olive oil if desired. Serve with fresh pita, veggies, or as a topping for falafel burgers.
